UMA Espresso
Espresso is the starting point for all UMA coffees. A short, essential extraction that reveals the balance and structure of each blend.
Ingredients
18g of fine coffee grounds, tamped to a regular, lump-free sand-like texture. Water at 90–94 °C, under pressure.
Preparation
Dose 18g into the portafilter and tamp with even pressure; a perfectly flat surface is essential for homogeneous extraction. Start the extraction and aim for 40ml in the cup in 25 to 30 seconds. Too fast, the coffee will be thin and acidic. Too slow, it will be bitter and constricted. A good espresso starts to flow like a thick stream of honey before opening up.
